Easy “cones” recipe
So today was one of these days where I was a bit running around to do my work but also feed my kids. They wanted pancakes, I had no time for that so I opted to create a similar to pancake batter and put into muffin molds and wrap up some additional things while it was in the oven.
Recipe for 12 muffins:
2 eggs+1.5 cups spelt flour+1 tsp cinnamon+1 tsp vanilla extract+1/2 cup almond milk and a bit less than 1 tbsp Monk fruit sweetener. If you remember my previous post, I started using Monk Fruit for baking in the last month and all I can say is that cones turned out great! Not too salty, not too sweet but perfect enough to either use a salty or sweet spread with no issue!
